Before I even left for the office, I knew I was going to be making Tilapia for dinner. My plan was to have it with a side of rice pilaf. Well, once the fish hit the pan my plans some how changed without me realizing it. Suddenly I was creating what would become the greatest fish tacos ever!
I just cooked 3 fillets in extra virgin olive oil. Then I added some frozen corn and about a 1/2 cup of salsa. I glanced up and saw chili pepper my family had sent me from their garden. I cut it up and threw it in too.
After pulling out some flour tortillas, salsa, cheese and sour cream we enjoyed this amazing masterpiece. Yum! I'm making this again!
